Cave Biber has been cultivating both local and international grape varieties for years. Twenty years ago, Jürg Biber planted vines that are now able to withstand global warming. This diversity allows the winery to produce a wide range of high-quality wines, adapting to different tastes and market demands. Until recently, the combination of local and global grape varieties was not truly a Valais trait, but is now highly valued among experts.

The grapes from the grape varieties planted today are produced as either AOC or VDP wines. AOC stands for Appellation origine controlée, which is equivalent to a protected designation of origin. AOC Valais means that the wine was grown and produced there according to the Valais wine law. VDP stands for Vin de pays and means "country wine" in German. This could therefore come from anywhere in the country. However, Cave Biber's VDP wines are all grown in their own vineyards. None are more than five kilometers from the cellar. The Malbec they cultivate produces excellent wines, but is not approved as an AOC wine, so it must be labeled VDP, even though it is a quality wine of the highest quality.

Autochthonous varieties - These grow exclusively in Valais:
  • Humagne - The Doyenne of the Valais grape varieties (Unknown X Colombaud)
  • Lavenetsch (Humagne X Completer)

Native varieties - These have been cultivated in Valais for a long time:

  • Heida Savagnin Blanc (original variety)
  • Sylvaner Le Rhin (Traminer X Austrian White)
  • Rouge du Pays Cornalin du Valais (Mayolet X Petit Rouge)
  • Syrah (Mondeuse Blanche X Dureza)
  • Pint Noir Pinot Noir (Savagnin Blanc X Unknown)
  • Humagne Rouge Cornalin Val d'Aoste (Rouge du Pays X Unknown)

International varieties - These grow in various wine-growing regions of the world:

  • Chardonnay (Gouais Blanc X Pinot Noir)
  • Savagnin Blanc Traminer (original variety)
  • Cabernet Franc (original variety)
  • Cabernet Sauvignon (Cabernt Franc X Sauvignon Blanc)
  • Malbec VDP (Magdaleine Noire des Charentes X Prunelard)
  • Merlot (Magdeleine Noire des Charentes X Cabernet Franc)
  • Pinot Noir (Savagnin Blanc X Unknown)
  • Syrah (Mondeuse Blanche X Dureza)
